2018 is just round the corner, and like you, we can’t believe it either. Where did the time go? Regardless of how 2017 has treated you, it’s time to turn the page to a new chapter. Forget the good, the bad and the ugly. Instead, look forward to a New Year’s Eve night of booze-soaked merry-making, rollickin’ good fun, and fireworks – definitely the fireworks, especially since there’ll be a minute-long dazzling shower of light every hour from 8.05PM at the Marina Bay and Civic District area. Monti is a glass-paneled restaurant that sits at the edge of the waterfront, directly across Marina Bay. Not only is it a stunning destination in itself, its proximity to Fullerton Bay and the Merlion means diners get to enjoy all the perks of its enviable locale. Take a stroll along the Jubilee Bridge or pose with our national icon the Merlion before enjoying Monti’s New Year’s Eve Menu (4 courses, $180 per pax including a glass of Veuve Clicquot; 6 courses, $350 per pax including a glass of Dom Pérignon). Start the dinner with an appetiser of King salmon, cold-smoked to keep the flesh tender, and move on to a scrumptious lobster and prawn ravioli. Mains for the 4-course meal include a choice between the pan-seared Japanese kinmedai, a dish of purplish Washington clams and mussels, and a charcoal-grilled USDA prime ribeye. Those who opted for 6-courses will be served a mouth-watering dish of A4 Hida wagyu tenderloin. Finally, end the night on a high note – not just with the firework displays – but also with a delectable yoghurt cheese cake.

‘La Vie En Rosé’ is the theme of the cabaret-style countdown party at CÉ LA VI. Perched 43 levels high atop Ocean Financial Centre, Zafferano (italian for ‘saffron’) is hosting a masquerade-themed gala dinner with five-courses ($450 per person, inclusive of complimentary access to the countdown party at Terrace Lounge and a glass of Louis Roederer Cristal Champagne during the countdown). For the first course, indulge in a house-made tagliolini served with Canadian lobster, marinated tomatoes and fresh mint. Other tantalising dishes include a wild-caught seabass and a 48-hours sous vide Tajima wagyu beef short rib with glazed French chestnuts. The fun continues up on the rooftop ($250 per pax for non-dining guests, inclusive of unlimited pours of G.H Mumm Champagne, house wines and beer), where revelers can enjoy the stunning spectacle of fireworks from the Marina Bay district.

Break into the poached egg starter topped with truffle and caviar, before savouring a caramelised foie gras on clams. Group pastry chef Jasmin Chew’s dessert creation for the occasion is the Fireball, a flaming ball of creamy Valrholna chocolate, mousse, feuilletine sponge and a lick of brandy. Up at 1-Altitude Gallery and Bar and Altimate, you’ll want to dance the night away with heart-thudding beats spun by guest DJ RODG and resident DJ Leonard T, as well as a host of other international musicians and artistes. At 282-metres above the city streets, you’ll be dazzled by the Marina Bay fireworks as you sip on the specially-concocted cocktail for the night, the Pop!Star ($20), a bubbly made with Moët & Chandon Brut Champagne fused with elderflower syrup and peaches.

Located at the waterfront of Keppel Bay, Bayswater Kitchen offers diners a spectacular view of Mount Faber’s NYE fireworks. Enjoy the NYE set dinner ($118 per person) at their breezy alfresco dining area, with seafood favourites such as the cured Hokkaido scallop with avocado and Oscietra caviar, and the wild shellfish bisque with white clams and whipped cod’s roe. Other briny-fresh offerings include the hand-picked blue crab with hand-rolled linguine, and a scrumptious seafood platter (min. 2 to share) with grilled lobster, prawns, tuna tartare and oysters. This laid-back, unpretentious seafront restaurant is the perfect way to ring in the new year, away from the bustle of the city crowd.
